After all sorts of people/places have talked about Scrivener, I tried it. Unfortunately, its support of output to LaTeX leaves a great deal to be desired. I’m sticking with Ulysses which is similar, but has much better LaTeX export. According to their blog, they have a new exporter in beta to support ePub as well (which is handy for iPad use).
I’ve been using the Simplenote/Notational Velocity combination and I have one big problem. I like to use it for a lot of short notes which makes the database of NV useful, but ideally, I’d like a combination of database and text files (e.g., pointing NV at a directory).
For writing on the iPad, because of the database business of NV, I’ve switched to using two apps, both of which sync with Dropbox. First is TeX Touch which is a LaTeX editor for the iPad ($9.99 but it’s useful to me). Second, is Droptext ($0.99) which is a really simple text editor but it works well with Dropbox.
I enjoy listening to these workflows episodes, but I would like to make a request.
I’d like to hear a workflows episode with someone more analog. Someone who for whatever reason doesn’t have an iPhone, or iPad. Someone who may travel regularly, but because of their analog ways doesn’t need apps like SimpleNote, InstaPaper or DropBox. Perhaps even someone who’s never heard of Omni-anything.
I think it would be a fresh view that would be useful for those that aren’t on the cutting edge of technology adoption or those who (like me) do travel lots, but because of our analog ways or the lack of Internet connectivity in the places we travel have to find other ways to do work.

Andy mentioned a lightweight RSS reader he uses on the iPad. I don’t see it in the notes and I can’t find it on the App Store. What is it?
